Coconut Cream of Mushroom Soup

Ingredients

1 onion, minced
3 packages mushrooms, sliced
7 cloves of garlic, minced
1/2 tsp thyme
Salt and pepper
3 cans of coconut milk
2 cups chicken broth
1/2 tsp cayenne
​1 cup sour cream
Lemon juice to finish
Sour cream and fried mushrooms for garnish

Instructions

  1. Saute the onion until translucent
  2. Add mushrooms, salt, pepper, and thyme
  3. Cook down until liquid concentrates
  4. Add garlic and cook for 30 seconds
  5. Add coconut milk and broth and bring to a simmer for 20 minutes. 
  6. Immersion blend the soup until the mushrooms are finely minced. 
  7. Remove the pot from heat and blend in 1 cup of sour cream with the immersion blender.





It is a happy day to get in a motorcycle ride, smell the fresh scents of fall, and make a nourishing meal.
